More than cocoa powder.

In 1828 a hydraulic press squeezed most of the fat out of cacao, and what was left behind was cocoa powder. The part that lets cacao melt is the part that got pressed out. Ours keeps it — 47.7% cacao butter on our most recent lab test.

We are a small family business. The bars are labeled by hand in the evenings, about two hundred at a time, by my wife and me with help from her family.

The cacao is Chuncho, the old native variety of La Convención, and it comes up from the jungle by bus.

I love my coffee so this was a tall order to add in to my routine. But this stuff is actually really good. I’ve been cutting back on coffee and this scratches the itch. you still get a lift but it doesn’t make me feel like garbage at 2pm. Heads up it is NOT sweet at all, it’s 100% cacao so don’t bite into it expecting a candy bar. I shave some into hot water with a little honey or sweetener and it’s basically a really rich dark hot chocolate. Takes 5 min. Highly recommend, great product

Questions people ask

Is it treated with alkali?

No. It is never alkalized (Dutch-processed). The beans are fermented, sun-dried, and stone-ground into paste. Nothing is added and nothing is pressed out.

How much fat is in a cup?

About 9.5 g of fat in a 20 g serving, all natural cacao butter. Our lab measured 47.7 g per 100 g.

Is it sweet?

No. There is no sugar in it at all. It is rich and dark. Most people add a little honey, sweetener or milk — some drink it exactly as it comes.

How do I use it?

Break off about a fifth of a bar (20 g), drop it into hot coffee, and stir for a real thirty seconds. You can also warm it in a small pan with a splash of water first, then pour your coffee in.

How long does a pack last?

Four bars make about 20 to 30 cups, so about three to four weeks if you have one most mornings. Eight bars make about 40 to 60.

Does it have caffeine?

It naturally contains some caffeine, less than a typical cup of coffee.

When does it ship?

From California, with tracking. We make about two hundred bars at a time and label them by hand, so if a batch has just run out the next one ships once it comes up from Cusco — a week or two. We will tell you if that is the case.
