Cacao is a plant, and plants take up what's in their soil. Cadmium is the one people ask about, and the honest answer is that it's present in cacao generally — the question was never whether it's there, it's how much.

So here are our numbers, from our most recent test:

• Cadmium — 0.17 mg/kg
• Lead — below the detection limit
• Salmonella — absent
• Moisture — 1.14%
• Cacao butter — 47.7%

Tested in Cusco and Lima, Peru.

A note on what this is and isn't: this is our most recent lab report, not a test of every batch. When we test again, this page gets the new numbers, including if they move.
