Why 100% cacao works in coffee
Most "chocolate" coffee is made with syrup or cocoa powder. Powder has most of its cacao butter pressed out, so it clumps and floats. Our bars are the whole cacao bean, ground with all its butter (47.7% on our latest lab test), so a piece melts straight into hot coffee and makes it rich and smooth.
There's no sugar in it. It's deep and dark, closer to very dark chocolate than to hot chocolate, and it rounds off the sharp edge of black coffee. Sweeten it or don't; it's your cup.
How to use it
- Break off 13–20 g, about a fifth of a bar or a little less.
- Drop it into hot coffee.
- Stir for 30 seconds, or froth for 10.
