One valley, one variety
Our cacao is Chuncho, the native cacao of La Convención, the green valleys around Quillabamba where the Andes drop toward the Amazon. My wife's family is from there. It's grown by small family farms, often alongside coffee and fruit trees, and it's known for a fruity, floral flavor with gentle bitterness.

How to prepare it
- Traditional cup: warm 20 g (about a fifth of a bar) with 6–8 oz of water or milk, whisk until smooth, and add spices if you like.
- In coffee: break off a piece and stir it into hot coffee. How to do it without clumps.
- As a latte: melt it into a little hot water and top with frothed milk. Recipe.
