What we sell

Bars of 100% Chuncho cacao, 100 g each. One ingredient: whole cacao, fermented, sun-dried and stone-ground into paste. Nothing is added and nothing is pressed out, so the cacao butter stays in the bar — 47.7% on our most recent lab test. That is why a piece melts into hot coffee instead of clumping or floating the way cocoa powder does.

It is not sweet. There is no sugar in it at all. Most people add honey, sweetener or milk. It naturally contains some caffeine, less than a typical cup of coffee.

How to use it: break off about 20 g, drop it into hot coffee, stir for about thirty seconds.

Who we are

A family business. Austin left California in 2019 and met his wife in La Convención, the high-jungle valley east of the Andes in the Cusco region of Peru. The cacao is Chuncho, the native variety of that valley. It comes up out of the valley by bus over the Abra Málaga pass at 4,316 m, is processed in Cusco, and the bars are labeled by hand at home in the evenings, about two hundred at a time. Orders ship from California with tracking.

Ayllu is Quechua for family and community. Every order includes lifetime access to the New Incan Cacao Society, which includes a live Q&A on the first Sunday of every month.
